
This is a photo of my Mom (right) and my Aunt. I don’t know what year it was taken, I guessing around 1929. My Mom was born in 1919 and she looks like she is maybe 10. I absolutely treasure this photo, last year my oldest sister, Peggy, who lives in California, sent me a large envelope full of photos, this was included. (Thanks again, Peg) Don’t you just love their shoes, tights and dresses?
Now, on to Cupcake Tuesday. Since most Mother’s love flowers and butterflies, I know I do, I decided to use those for decorations.

I started with the Pina Colada Cupcake recipe from Betty Crocker, and altered the recipe a little. I didn’t have any rum or coconut extract, and really didn’t want to buy some just for one recipe. So, I started scouting out the cupboards and found some Malibu Rum. I added about 1 Tablespoon instead of the 2 extracts. The recipe calls for sprinkling the cupcakes with coconut, I like the flavor of coconut, but I’m not a huge fan of just eating it. I also had one of these cupcakes with just whipped topping on it, and they were very good, light and airy.

Here are the decorations I used

First the Good & Fruity, I placed a mini colored marshmellow in the middle and then placed the candy in a circle to form the flower

Those are my favorites I think.
Then, the mini marshmellows, I think this is the best value. They were $.88 for the whole bag, and each cupcake takes only 5. I cut each marshmellow in half, but not all the way thru and then added a different color marshmellow for the center.

Next are the gummi butterflies, I bought those at a candy store in a nearby town.

And last, I cut large white marshmellows in quarters, pressed some colored sugar on them and added a mini marshmellow in the center.

I have to apoligize for the frosting. My mixer broke after mixing the cupcakes, I went to take the beaters out and the clip just popped right off. Of course, the mixer is probably 30+ years old, passed down from my Mom. Rather ironic that it broke while making these cupcakes. So, I had to buy frosting, and the kind that I grabbed didn’t seem to look very nice.
Anyway, you can still get the ideas for the decorations. And, the cupcake too, of course.
