Cupcake Tuesday~Chocolate Covered Cherry Cupcakes

As I’ve mentioned, lots of times before, one of my very favorite flavor combinations is chocolate and cherry. While we were at a mini bonfire over the weekend, someone mentioned Chocolate Covered Cherries, and of course, the first thing I thought of was Cupcakes.

I pulled out my cookbooks and hunted for a recipe, adapted it some, and the final result was delicious!

Chocolate Covered Cherry Cupcakes

Chocolate Covered Cherry Cupcakes

Combining the flavors of chocolate and cherries, these Chocolate Covered Cherry Cupcakes from HoosierHomemade.com are sure to please your palate!

Ingredients

Cupcakes

  • 1 box cake mix (I used butter flavor)
  • 4 eggs
  • 1 cup buttermilk (remember I mentioned how I use buttermilk instead of water)
  • 1/3 cup oil
  • 1 small box instant chocolate pudding
  • 1 can cherry pie filling

Ganache

  • 1 cup of milk chocolate chips (or semi-sweet)
  • 1 cup heavy whipping cream

Cherry Cream Frosting

  • 1 stick (1/2 cup) butter, softened
  • 4 oz. cream cheese
  • 2-3 teaspoons of cherry juice (maraschino cherries)
  • 2-3 cups of powdered sugar (depending on how thick you like it)

Chocolate Covered Cherry

  • Maraschino Cherries with stems
  • Chocolate wafers for melting (like Wilton’s )

Instructions

Cupcakes

  1. Mix cake mix with pudding, buttermilk, eggs and oil.
  2. Fold in cherry pie filling.
  3. Divide batter into cupcake liners, I use about 1/4 cup per liner. I got 3 dozen out of this recipe.

Ganache {recipe from [Lynn's Kitchen Adventures | http://www.lynnskitchenadventures.com/2010/05/ganache.html]}

  1. Warm up the cream, and pour over the chips, mix well.
  2. I turned the cupcakes upside down and simply dipped them in the ganache, and put them in the fridge to set up a little.

Cherry Cream Frosting

  1. Cream butter and cream cheese, slowly add powdered sugar and cherry juice until you reach desired consistency.
  2. Pipe onto cupcake, I used Wilton #1M tip , which by the way, is my favorite tip.

Chocolate Covered Cherries

  1. Rinse and pat dry cherries, melt chocolate and dip cherries.
  2. Place onto wax paper to set up.

  1. What are your storage tips for this cupcake? I am making then for an event tomorrow evening and was wondering if I should make the cake today and then frost them tomorrow. Can the cherries be dipped and kept in the fridge overnite or will they get “weepy”? Thanks!

    1. Hi Kit, yes you can certainly bake the cupcakes today, just store them in an airtight container. You can dip the cherries before, but yes, they will get weepy if you refrigerate them and then put them on the cupcakes. You can make the frosting ahead as well, just store in fridge.

  2. Thank you so much Liz! I made the cupcakes last night, FABULOUS by the way!, but I overlooked the pudding part and baked without and today when I looked at the recipe again, I noticed the pudding part. They are def worth baking another batch with pudding! Thanks!

  3. Just wondering, for making the cupcake part, do you just put in the pudding as a powder or do you make the pudding then pour into the cake mix? Thanks.

  5. I made the chocolate coverd cherry cupcakes this the weekend. I didn’t have cherry pie filling, so I substituted with diced fresh cherries.
    They came out great. Very moist and flavorful.
