Even though you would never know by our weather, Summer is really on the way! {I’m hoping} We love heading uptown to the Ice Cream Shop! Casey loves Cookie Dough Ice Cream, so I knew Cookie Dough Cupcakes would be a must when I was deciding what I wanted to bake for this series.
These Cookie Dough Cupcakes start with a white cake mix {you know me, the easier the better}, add some chocolate chips and of course, cookie dough in the middle. You don’t have to be afraid of eating the cookie dough, there are no eggs in this recipe.
Pair them up with some Cookie Dough Ice Cream in these cute little dishes I found at the Dollar Tree, and your kiddos will love you even more!

Ingredients
- White Cake Mix plus ingredients
- 1 cup of mini chocolate chips
- Cookie Dough {recipe here }
- Buttercream or Decorator Frosting
- Decorator bag fitted with a #12 round tip
- Chocolate Chunks {I used Almond Bark and chopped coarsely}
Instructions
- Mix white cake, I add buttermilk instead of water, oil and 4 eggs.
- Fold in chocolate chips.
- Bake at 350 degrees for about 12 minutes or until a toothpick inserted comes out clean.
- Cool completely.
- Mix cookie dough and chill.
- Using an apple corer, make a hole to fill with cookie dough. You can learn how I fill cupcakes here .
- Place a small ball of cookie dough , and replace the cake “plug”.
- Pipe on frosting and garnish with chopped chocolate or even mini chocolate chips. I didn’t add a lot of frosting, because I didn’t want to add a lot more sweetness since the cake has chocolate chips plus the cookie dough.
