Concession Stand Cupcakes

All week long, my middle son is playing in the Indiana State Babe Ruth Tournament. In fact, this is late today because we didn’t get home until 12:30 a.m. from the game last night. I thought it would be fun to create some Concession Stand Cupcakes. When I think of concession stand food, I think of pop, candy, popcorn, nachos and cheese. I didn’t think the popcorn and nachos would taste very good on a cupcake, so I just stuck with the pop and candy.

For the cake, I used this Dr Pepper Cake recipe that I found on AllRecipes.com, but I changed it a little.

I thought the batter looked funny with the marshmallows floating.  The batter was kinda runny and messy, and I had to be careful when filling the liners to get a few marshmallows with each scoop. I did end up with some batter left that had no marshmallows, so I baked the cupcakes plain, I liked them better that way. They are also very sticky, but taste good.

Dr. Pepper Cake

2 c. Flour

2 c. White Sugar

1 c. Dr. Pepper soft drink

3 T. Cocoa Powder

2 eggs, beaten

1 t. Baking Soda

1 t. Vanilla

1 c. Butter

1/2 c. Buttermilk (I used regular milk)

1 1/2 c. Mini Marshmallows (I used a little less)

Directions:

Preheat oven to 350 degrees, fill muffin tins with liners

Mix together the flour and sugar

In a saucepan combine Dr. Pepper, cocoa and 1 c. butter, bring to a boil. Pour melted butter mexture over the flour and mix well. Stir in the beaten eggs, baking soda, vanilla, milk and marshmallows and mix well. Pour into prepared pans.

Bake at 350 degrees for 30 – 35 min.

Frost as desired.

I added some favorite candy that you might find at the concession stand.
