If you have been following Cupcake Boot Camp, you have been learning a little more about cupcakes and how simple they can be. You can dress up an ordinary box mix cupcake by adding a delicious frosting and a cupcake wrapper, like the Damask Cupcake Wrapper I have around the Chocolate Raspberry Cupcakes.

Add a little wine and a basket with lotions and finger nail polish and you have a fun and super easy Girl’s Night Out.

Chocolate Cupcakes with Raspberry Buttercream and a raspberry on top

Chocolate Cupcakes with Raspberry Buttercream

Yield: 18-24 cupcakes
Prep Time: 20 minutes
Cook Time: 15 minutes
Total Time: 35 minutes

Ingredients

Cupcakes

  • Chocolate Cake Mix
  • 4 eggs
  • 1 cup buttermilk
  • 1/3 cup oil

Chocolate Mousse

  • 1 small box of JELL-O Chocolate Mousse
  • 1 cup milk

Raspberry Buttercream

  • 1 cup {2 sticks} butter
  • 1 pint fresh raspberries
  • 4-5 cups powdered sugar
  • 2-4 tablespoons granulated sugar
  • 1-2 tablespoons water

Instructions

Cupcakes

  1. Mix cake mix with eggs, buttermilk and oil
  2. Divide into cupcake liners and bake according to directions on the box

Chocolate Mousse

  1. Mix mousse mix and milk and beat according to directions on box

Raspberry Buttercream

  1. In a small saucepan on the stove, combine 1/2 of the box of raspberries, white granulated sugar and water. Bring to boil, reduce heat, smash berries gently to break them down and simmer until mixture is slightly thick.Cool slightly
  2. In a large mixing bowl, cream the butter until smooth and fluffy
  3. Gradually add half of powdered sugar, then add half of the raspberry puree, beat after each addition
  4. Add more powdered sugar and remaining berry puree until desired consistency

Decorating Cupcakes

  1. After the mousse has set up and the cupcakes are cooled, fill cupcakes with mousse using a decorator bag and Bismark tip
  2. Fit a decorator bag with a #1M tip, fill with Raspberry Buttercream and pipe a large swirl onto each cupcake. Top with a fresh raspberry
