<p>One of the flavors that I love most, especially during Spring is orange, and when you pair it with cranberries&#8230;it&#8217;s a win-win! These <strong>Orange Cranberry Muffins</strong> are a perfect <strong>Spring treat</strong>!</p>

<p>The original recipe for the <strong>Orange Cranberry Muffins</strong> came from <a title="Orange Cranberry Muffins" href="http://joyinmykitchen.blogspot.com/2009/05/orange-cranberry-muffins.html" target="_blank">Joy in my Kitchen</a>, I changed the recipe a bit, and added the orange glaze to the top to make them a little more special for <strong>Easter Brunch</strong>.</p>

Adapted from <a href="http://joyinmykitchen.blogspot.com/2009/05/orange-cranberry-muffins.html" class="summary-link" target="_blank">Joy in my Kitchen</a></p></div></div><p id="zlrecipe-ingredients" class="h-4 strong">Ingredients</p><ul id="zlrecipe-ingredients-list"><div id="zlrecipe-ingredient-0" class="ingredient-label">Muffins</div><li id="zlrecipe-ingredient-1" class="ingredient">1/3 cup brown sugar</li><li id="zlrecipe-ingredient-2" class="ingredient">1/2 cup orange juice</li><li id="zlrecipe-ingredient-3" class="ingredient">1 teaspoon orange zest </li><li id="zlrecipe-ingredient-4" class="ingredient">1 egg </li><li id="zlrecipe-ingredient-5" class="ingredient">1 teaspoon vanilla</li><li id="zlrecipe-ingredient-6" class="ingredient">1/4 cup applesauce</li><li id="zlrecipe-ingredient-7" class="ingredient">1 1/3 cups flour {I used all-purpose, you can use wheat, white or a combo}</li><li id="zlrecipe-ingredient-8" class="ingredient">2 teaspoon baking powder</li><li id="zlrecipe-ingredient-9" class="ingredient">1/2 teaspoon cinnamon</li><li id="zlrecipe-ingredient-10" class="ingredient">1 cup cranberries, fresh or frozen, chopped</li><div id="zlrecipe-ingredient-11" class="ingredient-label">Glaze</div><li id="zlrecipe-ingredient-12" class="ingredient">1/4 cup powdered sugar</li><li id="zlrecipe-ingredient-13" class="ingredient">1-2 teaspoons orange juice</li></ul><p id="zlrecipe-instructions" class="h-4 strong">Instructions</p><ol id="zlrecipe-instructions-list" class="instructions"><li id="zlrecipe-instruction-0" class="instruction">Preheat oven to 350 degrees</li><li id="zlrecipe-instruction-1" class="instruction">Combine dry ingredients and set aside</li><li id="zlrecipe-instruction-2" class="instruction">In a large bowl, combine brown sugar, orange juice, zest, egg, vanilla and applesauce</li><li id="zlrecipe-instruction-3" class="instruction">Combine dry and wet ingredients until well incorporated </li><li id="zlrecipe-instruction-4" class="instruction">Fold in chopped cranberries</li><li id="zlrecipe-instruction-5" class="instruction">Spray a muffin tin with non-stick cooking spray {or add paper liners}</li><li id="zlrecipe-instruction-6" class="instruction">Divide batter into muffin tin {I got 9 muffins, using about 6 tablespoons of batter}</li><li id="zlrecipe-instruction-7" class="instruction">Bake for 12-15 minutes or until a toothpick inserted comes out clean</li><div id="zlrecipe-instruction-8" class="instruction-label">Glaze</div><li id="zlrecipe-instruction-9" class="instruction">Combine powdered sugar and orange juice {add a little juice at a time until you get the consistency you want}</li><li id="zlrecipe-instruction-10" class="instruction">Spoon over semi-cooled muffins, sprinkle with orange zest if you like</li></ol><p id="zlrecipe-notes" class="h-4 strong">Notes</p><div id="zlrecipe-notes-list"><p class="notes">Liz says...

			<content:encoded><![CDATA[<p>I know I&#8217;ve said it before, but I just have to say it again&#8230;I just LOVE this time of year and all the baking and cooking! There just isn&#8217;t enough time in the day or days of the week for me to bake up all the great <strong>Pumpkin</strong> recipes I have on my list.</p>
<p>I baked these <strong>Pumpkin Muffins</strong> for a Halloween Party we went to, and added them to a tray with <strong><a href="http://hoosierhomemade.com/category/cupcake-tuesday/" target="_blank">Halloween Cupcakes</a></strong> and <strong>Pumpkin Bars</strong> (recipe soon). I also left a few at home to have with our <a href="http://hoosierhomemade.com/halloween-breakfast-food/" target="_blank"><strong>Halloween Breakfast</strong> </a>last weekend, they were so good they almost didn&#8217;t make it to the breakfast. Then I had to save a few for pictures, and they almost didn&#8217;t last for that either.</p>
<p>Needless to say&#8230;these <strong>Pumpkin Muffins</strong> <span style="text-decoration: line-through;">are </span>were really good!!</p>

<p>I typically share a <a href="http://hoosierhomemade.com/category/main-dishes/" target="_blank">Main Dish</a> with you and our <strong><em>Menu Plan, </em></strong>but since these <strong><em>Blueberry Muffins </em></strong>go so well with breakfast, I thought you might like them.</p>

<p>I baked them in regular size, plain and some with cinnamon streusel topping, and also some mini size. My youngest, likes them better in the mini size. It&#8217;s the exact same recipe, but for some reason, he says they taste different. And of course, I don&#8217;t mind baking them different sizes. I have shared these before, but it&#8217;s been over a year, so I thought you might like to have the recipe again. Plus, my camera skills have gotten a little better.</p>

			</p></div><p id="zlrecipe-ingredients" class="h-4 strong">Ingredients</p><ul id="zlrecipe-ingredients-list"><li id="zlrecipe-ingredient-0" class="ingredient">1 1/2 cup flour</li><li id="zlrecipe-ingredient-1" class="ingredient">3/4 cup sugar</li><li id="zlrecipe-ingredient-2" class="ingredient">1/2 teaspoon salt</li><li id="zlrecipe-ingredient-3" class="ingredient">2 teaspoons baking powder</li><li id="zlrecipe-ingredient-4" class="ingredient">1/3 cup oil</li><li id="zlrecipe-ingredient-5" class="ingredient">1 egg, beaten</li><li id="zlrecipe-ingredient-6" class="ingredient">1/3 cup milk</li><li id="zlrecipe-ingredient-7" class="ingredient">1 cup blueberries, fresh or frozen are fine</li></ul><p id="zlrecipe-instructions" class="h-4 strong">Instructions</p><ol id="zlrecipe-instructions-list" class="instructions"><li id="zlrecipe-instruction-0" class="instruction">Preheat oven to 400 degrees. Place liners in muffin tins, set aside</li><li id="zlrecipe-instruction-1" class="instruction">Whisk together dry ingredients </li><li id="zlrecipe-instruction-2" class="instruction">Pour oil into 1 cup measuring cup, beat egg and add to cup, fill with enough milk to measure 1 cup, beat until mixed well</li><li id="zlrecipe-instruction-3" class="instruction">Add to dry ingredients</li><li id="zlrecipe-instruction-4" class="instruction">Combine, just until all ingredients are incorporated, don't overmix</li><li id="zlrecipe-instruction-5" class="instruction">Place washed berries in a bowl</li><li id="zlrecipe-instruction-6" class="instruction">Add a pinch of flour</li><li id="zlrecipe-instruction-7" class="instruction">Coat berries with flour, I do this so the berries don't sink to the bottom of the muffin</li><li id="zlrecipe-instruction-8" class="instruction">Add to muffin mixture</li><li id="zlrecipe-instruction-9" class="instruction">Fold berries in gently</li><li id="zlrecipe-instruction-10" class="instruction">Fill liners about 2/3 full. Bake for about 15-20 minutes depending on the size. <p>There are many of my cake recipes that I have made into muffins or cupcakes. These <strong><em>Graham Streusel Muffins </em></strong>are some that work perfectly.</p>
<p>I shared my <strong><em><a href="http://hoosierhomemade.com/graham-streusel-cake/" target="_blank">Graham Streusel Cake</a> </em></strong>with you last winter, but wanted to share these muffins too.</p>

Recipe from HoosierHomemade.com</p></div></div><p id="zlrecipe-ingredients" class="h-4 strong">Ingredients</p><ul id="zlrecipe-ingredients-list"><li id="zlrecipe-ingredient-0" class="ingredient">1 Yellow Cake Mix plus ingredients on box (oil, eggs & water)</li><li id="zlrecipe-ingredient-1" class="ingredient">1 1/2 cups Graham Cracker Crumbs</li><li id="zlrecipe-ingredient-2" class="ingredient">3/4 cup Brown Sugar</li><li id="zlrecipe-ingredient-3" class="ingredient">3/4 cup Walnuts or Pecans, chopped</li><li id="zlrecipe-ingredient-4" class="ingredient">1 1/2 teaspoon Cinnamon</li><li id="zlrecipe-ingredient-5" class="ingredient">2/3 cup Butter or Margarine, melted (I use a little less)</li></ul><p id="zlrecipe-instructions" class="h-4 strong">Instructions</p><ol id="zlrecipe-instructions-list" class="instructions"><li id="zlrecipe-instruction-0" class="instruction">Preheat oven to 350 degrees. Line muffin tin with paper liners.</li><li id="zlrecipe-instruction-1" class="instruction">Mix the Graham Cracker crumbs, nuts, cinnamon and butter until well combined, set aside. <p>These go great with a cup of tea, for a snack, breakfast, and even dessert. They freeze well, and could be removed to throw into <a href="http://www.easylunchboxes.com?AFFID=39684" target="_blank">lunch</a> for the kiddos.</p>
