			<content:encoded><![CDATA[<p>I know I&#8217;ve said it before, but I just have to say it again&#8230;I just LOVE this time of year and all the baking and cooking! There just isn&#8217;t enough time in the day or days of the week for me to bake up all the great <strong>Pumpkin</strong> recipes I have on my list.</p>
<p>I baked these <strong>Pumpkin Muffins</strong> for a Halloween Party we went to, and added them to a tray with <strong><a href="http://hoosierhomemade.com/category/cupcake-tuesday/" target="_blank">Halloween Cupcakes</a></strong> and <strong>Pumpkin Bars</strong> (recipe soon). I also left a few at home to have with our <a href="http://hoosierhomemade.com/halloween-breakfast-food/" target="_blank"><strong>Halloween Breakfast</strong> </a>last weekend, they were so good they almost didn&#8217;t make it to the breakfast. Then I had to save a few for pictures, and they almost didn&#8217;t last for that either.</p>
<p>Needless to say&#8230;these <strong>Pumpkin Muffins</strong> <span style="text-decoration: line-through;">are </span>were really good!!</p>

I did, but am really glad to be back to my regular posting and sharing yummy recipes and my home with you!</p>
<p>I typically share a <a href="http://hoosierhomemade.com/category/main-dishes/" target="_blank">Main Dish</a> with you and our <strong><em>Menu Plan, </em></strong>but since these <strong><em>Blueberry Muffins </em></strong>go so well with breakfast, I thought you might like them.</p>

<p>I baked them in regular size, plain and some with cinnamon streusel topping, and also some mini size. My youngest, likes them better in the mini size. It&#8217;s the exact same recipe, but for some reason, he says they taste different. And of course, I don&#8217;t mind baking them different sizes. I have shared these before, but it&#8217;s been over a year, so I thought you might like to have the recipe again. Plus, my camera skills have gotten a little better.</p>

			</p></div><p id="zlrecipe-ingredients" class="h-4 strong">Ingredients</p><ul id="zlrecipe-ingredients-list"><li id="zlrecipe-ingredient-0" class="ingredient">1 1/2 cup flour</li><li id="zlrecipe-ingredient-1" class="ingredient">3/4 cup sugar</li><li id="zlrecipe-ingredient-2" class="ingredient">1/2 teaspoon salt</li><li id="zlrecipe-ingredient-3" class="ingredient">2 teaspoons baking powder</li><li id="zlrecipe-ingredient-4" class="ingredient">1/3 cup oil</li><li id="zlrecipe-ingredient-5" class="ingredient">1 egg, beaten</li><li id="zlrecipe-ingredient-6" class="ingredient">1/3 cup milk</li><li id="zlrecipe-ingredient-7" class="ingredient">1 cup blueberries, fresh or frozen are fine</li></ul><p id="zlrecipe-instructions" class="h-4 strong">Instructions</p><ol id="zlrecipe-instructions-list" class="instructions"><li id="zlrecipe-instruction-0" class="instruction">Preheat oven to 400 degrees. Place liners in muffin tins, set aside</li><li id="zlrecipe-instruction-1" class="instruction">Whisk together dry ingredients </li><li id="zlrecipe-instruction-2" class="instruction">Pour oil into 1 cup measuring cup, beat egg and add to cup, fill with enough milk to measure 1 cup, beat until mixed well</li><li id="zlrecipe-instruction-3" class="instruction">Add to dry ingredients</li><li id="zlrecipe-instruction-4" class="instruction">Combine, just until all ingredients are incorporated, don't overmix</li><li id="zlrecipe-instruction-5" class="instruction">Place washed berries in a bowl</li><li id="zlrecipe-instruction-6" class="instruction">Add a pinch of flour</li><li id="zlrecipe-instruction-7" class="instruction">Coat berries with flour, I do this so the berries don't sink to the bottom of the muffin</li><li id="zlrecipe-instruction-8" class="instruction">Add to muffin mixture</li><li id="zlrecipe-instruction-9" class="instruction">Fold berries in gently</li><li id="zlrecipe-instruction-10" class="instruction">Fill liners about 2/3 full. Bake for about 15-20 minutes depending on the size. Recipe from HoosierHomemade.com</p></div><p id="zlrecipe-ingredients" class="h-4 strong">Ingredients</p><ul id="zlrecipe-ingredients-list"><li id="zlrecipe-ingredient-0" class="ingredient">1 Yellow Cake Mix plus ingredients on box (oil, eggs & water)</li><li id="zlrecipe-ingredient-1" class="ingredient">1 1/2 cups Graham Cracker Crumbs</li><li id="zlrecipe-ingredient-2" class="ingredient">3/4 cup Brown Sugar</li><li id="zlrecipe-ingredient-3" class="ingredient">3/4 cup Walnuts or Pecans, chopped</li><li id="zlrecipe-ingredient-4" class="ingredient">1 1/2 teaspoon Cinnamon</li><li id="zlrecipe-ingredient-5" class="ingredient">2/3 cup Butter or Margarine, melted (I use a little less)</li></ul><p id="zlrecipe-instructions" class="h-4 strong">Instructions</p><ol id="zlrecipe-instructions-list" class="instructions"><li id="zlrecipe-instruction-0" class="instruction">Preheat oven to 350 degrees. Line muffin tin with paper liners.</li><li id="zlrecipe-instruction-1" class="instruction">Mix the Graham Cracker crumbs, nuts, cinnamon and butter until well combined, set aside. Prepare cake mix according to directions on box.</li><li id="zlrecipe-instruction-2" class="instruction">Fill each liner with a couple tablespoons of cake batter, top with a sprinkle of crumb topping, add more batter and more crumb topping.</li><li id="zlrecipe-instruction-3" class="instruction">Bake for about 15-20 minutes, or until a toothpick inserted comes out clean.</li></ol><div class="zl-linkback" >Google Recipe View Microformatting by <a title="ZipList Recipe Plugin" href="http://www.ziplist.com/recipe_plugin" target="_blank">ZipList Recipe Plugin</a></div><div class="ziplist-recipe-plugin" style="display: none;">1.2</div></div></div></p>
<p>These go great with a cup of tea, for a snack, breakfast, and even dessert. They freeze well, and could be removed to throw into <a href="http://www.easylunchboxes.com?AFFID=39684" target="_blank">lunch</a> for the kiddos.</p>

			<content:encoded><![CDATA[<p>If you visit my blog often, or even once in awhile, you will quickly notice that I LOVE to bake. I have said it before, and will probably will say it tons more, I would bake all day, everyday, if I could. And I got my chance last Saturday, well at least, part of the day (12 &#8211; 5:30)</p>
<p>With the boys back in school, I wanted to bake some breakfast snacks that they could grab and go, since we leave the house at 7 a.m. to take them to school.</p>

<p>Even though I spent 5 1/2 hours baking, I got a lot done.  I find it easier to do lots of baking at one time.</p>
<ol>
<li>All of the ingredients are out</li>
<li>The measuring cups are already dirty</li>
<li>The oven is preheated</li>
<li>The kitchen is a mess, so why not get lots done</li>
<li>It frees up time during the week</li>
</ol>
<p>One of the new tasks that I tried this time was having a tub of hot, soapy water in the sink to throw the dirty utensils in. It worked great and made clean up much quicker.</p>

This past Saturday, I had a baking day and made this new recipe for Zucchini Muffins. <p style="text-align: left;">Ingredients: (I doubled everything to make 12 muffins)</p>

<div style="text-align: left;">1/2 c. Sugar  (I used Brown Sugar)</div>

<div style="text-align: left;">1/4 c. Oil  (You could also use applesauce)</div>

<div style="text-align: left;">1 c. Zucchini, shredded (I grate the zucchini in the food processor)</div>

<p style="text-align: left;"> Fill muffin liners. Baker at 350 degrees for 22-25 minutes or until a tootpick comes out clean.</p>
<p style="text-align: left;"><strong><em>Bakers Note:</em></strong>  I used <a href="http://hoosierhomemade.com/?p=3001">zucchini that was frozen</a> and defrosted it in the microwave. I did drain a little liquid from it, but used most of it. It made the muffins really moist. Also, using the craisins, gave the muffins a tangy sweetness taste, according to my husband.</p>
