Summer has officially begun! Even though my boys still have a couple days left of school, we have definitely started planning our Summer fun. Of course, you probably know, Nick graduates this weekend, his party is next weekend, and we start travelling with Summer Baseball next week. We also surprised the boys yesterday with a swimming pool as a little gift for being on the Honor Roll all year.

Besides all of those exciting things, we have been chatting about other family fun. We thought it would be fun to share some ideas for Camping. Whether you just pitch a tent in the backyard, enjoy a stay-cation, or load up the camper and head to the park or campground for some family fun, you are sure to enjoy these recipes, games, and yes…Doug is even building a tent! When you think of treats around the Campfire, you almost always think of S’Mores. So what better way to kick off this Camping Week, than these Campfire Cupcakes.

These Campfire Cupcakes, that I spotted over at Betty Crocker, are the inspiration for our Camping Week. To make them taste like S’mores, you start with a chocolate cupcake and then top with Marshmallow Buttercream Frosting. But first, let’s make the fire…

Although I loved the look of the fire, and the ease of making it, I need to caution you, it’s not really kid friendly. After the candy is melted, you break it into pieces to create the look of fire, I was surprised that the pieces were very sharp, not something you want a child to handle.

So, my suggestion, if you are making these for children, you try using soft candy, maybe AirHeads, or even a fruit roll up for the fire.

The pretzels for the fire wood and the mini roasted marshmallows are perfect though.

Campfire Cupcakes: S’Mores with Marshmallow Buttercream

Campfire Cupcakes: S’Mores with Marshmallow Buttercream

Cook Time: 15 minutes
Total Time: 30 minutes

A fun treat for your camp out. Recipe from HoosierHomemade.com. Adapted from Betty Crocker.

Ingredients

  • Chocolate Cupcakes

Marshmallow Buttercream Frosting

  • 1 jar {7 oz} marshmallow creme {found in the baking aisle}
  • 1 cup butter, softened
  • 2-3 cups powdered sugar {depending on consistency}
  • Buttercup Yellow Coloring - just a little

Decorations

  • 10-20 individually wrapped red cinnamon hard candy, unwrapped {I bought Cinnamon Jolly Ranchers}
  • 10-20 individually wrapped yellow butterscotch hard candy, unwrapped
  • 60 pretzel sticks
  • 48 mini marshmallows
  • 24 toothpicks

Extra tools to make Fire

  • Resealable bag
  • Rolling Pin
  • Foil
  • Cookie Sheet

Instructions

  1. Bake and cool cupcakes {any chocolate cake will work}

Make the fire

  1. Preheat oven to 350 degrees {or leave it on after you bake the cupcakes}
  2. Line a cookie sheet with foil and lightly spray with non-stick cooking spray
  3. Unwrap candies, and place in a resealable bag, crush with rolling pin
  4. Place on foil and bake about 5-7 minutes - watch closely, mine melted quickly
  5. Cool completely

Marshmallow Buttercream Frosting

  1. Spoon marshmallow creme in a large bowl and microwave about 15-20 seconds
  2. Add softened butter and beat well
  3. Gradually add powdered sugar, depending on consistency you want
  4. Add yellow coloring and mix well {you can certainly leave the frosting white, I think next time I need to add a little more coloring to mine}

Decorate

  1. Frost cupcakes
  2. CAREFULLY break candy into pieces for fire - it's SHARP, be careful, add to cupcake
  3. Break pretzel sticks to different lengths, add to cupcake to resemble logs
  4. Very slightly roast marshmallows {I placed 2 on a roasting stick and cooked over the fire on my stove} Place on toothpick and add to cupcake

Notes

Liz says...While I loved the look of these, next time I would definitely use something different for the fire. The candy was sharp, and not kid friendly.
They tasted good though.

    Have you come across anything that was softer than the hard candies but still stood up & looked like fire?

    1. Hi Katie, you could use frosting tinted yellow, orange and red, be sure the frosting is stiff enough to stand up. Use a large star tip to add the “flames.”
