Cake Mix Cookies with Mix-ins

So…I’m a little behind! I know Cake Mix Cookies have been around…pretty much forever. Until a couple weeks ago, I had never tried or baked them. Wow…was I missing out!!

If you have follow me, especially my baking…you will quickly realize that I love to share easy, simple, quick but delicious recipes! You don’t have to spend the whole day on everything you cook or bake, it just needs to LOOK like you did!

Every Thursday I bake for Nick’s Football Team. The Touchdown Club serves the team dinner, and I share dessert. Although I could take cupcakes every week, I try to change it up a bit. I’ve also learned over the last 4 years, that teenage boys really don’t care how fancy the dessert is. I have actually seen them grab a pre-packaged store bought treat over a home baked treat. I know…crazy!

I was a little pressed for time a couple weeks ago, and it was close to 1 p.m. already. I quickly scanned the pantry and decided that bar cookies would be the quickest treat. I whipped up a batch of my Peanut Butter Swirl Bars and while they were baking I hunted for the next treat to share. I thought about brownies, but then spotted the cake mixes. Hmmm…I had never tried Cake Mix Cookies before, and while they aren’t bar cookies that are super fast, I had heard how easy they were.

But I didn’t want just regular old chocolate, so once again I headed back to the pantry to see what kind of “mix ins” I had. Peanut Butter Chips and Mini M&M’s…perfect! The boys will love them!

I started with the recipe from Duncan Hines. It was SUPER easy and went together in a flash! The Peanut Butter Chips added a little burst of flavor, similar to a peanut butter cup.

And because all kids {and adults} love M&M’s…these were perfect!

Cake Mix Cookies

Yield: 3 dozen
Prep Time: 5 minutes
Cook Time: 10 minutes
Total Time: 15 minutes

Easy and Delicious Cake Mix Cookies with Peanut Butter and M&M's

Ingredients

  • 1 box cake mix
  • 2 eggs
  • 1/2 cup oil
  • About 1/2 cup each Mix-ins like Peanut Butter Chips, M&M's, Nuts, Toffee Bits, etc

Instructions

  1. Preheat oven to 350 degrees
  2. Spray cookie sheet with non-stick cooking spray
  3. Mix together cake mix, eggs and oil
  4. Stir in additional mix-ins, if desired
  5. Scoop with cookie dough scoop or teaspoon
  6. Bake for 10-12 minutes

  1. I’ve made pudding cookies, but never cake mix cookies – until tonight, that is! The last batch just came out of the oven. 1st batch chocolate chips, 2nd batch peanut butter chips, last batch toffee chips (all mixed in to devil’s food).

    They’re so good! I would suggest going with a teaspoon – or even smaller – to measure them out. The first few I baked were a little larger and they spread and got crispy instead of nice and poofy. The rest turned out great, though 🙂

  2. I love this idea too. At last years fall festival bake sale I used a brownie mix to made cookies. I sandwiched two cookies together with icing! They were moist and chewy! Needless to say, they sold out quick. Thanks for the tips.

    I have made these before and they are great!!I use them for our Sisters cookie exchange.( I have 5 sisters younger than Me and at Christmas we exchange homemade crafts and cookies) anyway I so enjoyed your story about baking for the football team. My youngest sister always did this for her sons ball team.He is now in her second year of college and just commented the other day how this time of year she so misses not doing the team dinners before the home games.Most of those boys still stay in contact and come out to the farm. So have fun with this cause our kids all grow up and we only get to do these things a short while. love your blog…I read it every day.

  5. I made some from Lazy Mom with rolo candy in the middle and Oh my goodness I can no longer say I suck at making cookies!! They were easy and fun to make and best of all VERY good!

  7. Have you ever tried the lemon cookies with white chocolate chips? They are great!

  8. I used to make cookies for meetings at work all the time – the cake mix cookies were always a giant hit! I gave out the recipe so many times that I don’t think I’ll ever forget it. This is why I always stock up on cake mixes on sale.
