Brownie Goody Bars

There is something to be said for an ooey, gooey chocolate brownie – sometimes we just need to indulge. These Brownie Goody Bars are super easy too! They start with a brownie mix (or make them from scratch if you like), topped with frosting and then to send them over the top – a mixture of peanut butter, chocolate chips and rice cereal.

I first tried these delicious Brownie Goody Bars a few years back when I visited Betty Crocker Kitchens. I’m not sure what I liked the best – the moist brownie on the bottom, the creamy frosting or the combination of chocolate and peanut butter with a little crunch on top.

Perfect for just about any occasion – they are easy to serve at potlucks or picnics, can be made ahead a day or so, great for a birthday celebration but elegant enough you could serve them at a dinner party.

Prep Time: 15 minutes
Cook Time: 30 minutes
Total Time: 45 minutes

Top your brownies with frosting and a delicious topping of chocolate chips, peanut butter and rice cereal to make an irresistible brownie bar! Recipe from HoosierHomemade.com

Ingredients

  • 1 box brownie mix, 9×9 inch pan size plus ingredients to make them
  • 1 container vanilla frosting or homemade
  • 2 cups crisp rice cereal
  • 2/3 cup Peanut Butter
  • 1 1/3 chocolate chips (I like Milk Chocolate)

Instructions

  1. Bake brownies and let cool.
  2. In a microwave safe bowl, add the chocolate chips and Peanut Butter
  3. Heat for about 2 minutes until slightly melted, stir until all the chocolate chips are melted
  4. Add chocolate mixture to cereal, stir until all combined
  5. Frost the brownies with vanilla frosting
  6. Spread cereal mixture over frosted brownies
  7. Refrigerate for 1 hour until set
  8. Cut into bars

    I have been a cake decorator, baker, florist and all around party planner for MANY MANY years now, way too many to say, and I’m new to your site. I ABSOLUTELY LOVE LOVE LOVE IT !! I haven’t had time to look thru a lot of it yet (Boy you have tons of info)but I love what I’ve seen so far.

    I remember back in the day my mom used to make bundt cakes. They were delicious and they always had some kind of filling in the middle. Nowadays you can’t find any recipe for those bundt cakes.
    I had an idea for St. Patrick’s day for a cake but don’t know how to make it.
    I would love to make a white cake with an Irish Cream filling in the middle. A filling like the kind in the middle of a Hostess cupcake, smooth & creamy. Is this possible ?? Do you or anyone have a recipe for something like this ??

  9. These look really easy but so delicious! I’d definitely make the frosting from scratch but I think that is worth a few minutes of extra work.
