Blueberry Sauce with shortcake

Served over Old Fashioned Shortcakes

My husband’s Aunt Mary is an awesome cook (and a great friend of mine). She has given me countless recipes. My all time favorite from her is the Angel Food Cake, from scratch, of course. (I will share it soon) I have received many ribbons at our County Fair with that recipe and she has also.

A little while ago, she emailed me this recipe for blueberry sauce. It’s a really quick and easy treat, since I had blueberries in the freezer. It’s delicious over ice cream, but you could also use it on pancakes, waffles, shortcakes or even that Angel Food Cake.

Ingredients:

  • 2 c. Blueberries
  • 1/3 c. Sugar
  • 2 T. Water
  • 1 1/2 t. Cornstarch
  • 1 t. Lemon Juice

Combine 1 cup berries, sugar, water and cornstarch in saucepan on top of stove. Heat through and simmer for 1-2 minutes.

Blueberry Sauce

Add the remaining cup of berries and lemon juice.

Let cool and serve.

  1. This sounds so good! I’v never had blue berry sauce, but I can’t wait to try it. And I’m looking forward to trying the angel food cake!

    As for the heat, I know what you mean! This has indeed been a hot week. It was so nice yesterday to feel the cooler air. Enjoy your share! 🙂

  2. I am just eating some blueberry sauce over my waffles this morning — I love it even better than syrup. Yummy.

    I got the popsicle molds at Bed, Bath and Beyond. They have a couple molds on their webpage, and stock at least one in the store where I live! I’ve seen some at target too, but I like how sturdy these are.

  3. YUM! That sounds pretty much like the base I use for my blueberry pie, I just don’t cook it. I love blueberry with lemon. So fresh and summery!

  5. Oh, I love blueberry sauce. My daughter has been asking for it every time we make waffles or pancakes. YUM!
