Recently, I had the privilege of baking for my son’s girlfriend’s birthday. She requested my Butterfinger Cupcakes. And since she doesn’t like chocolate (I know, crazy huh?) I decided to also make some fun cupcakes with Skittles and Starburst, her favorite candy.

I started with a white cupcake, and made it into a Poke Cupcake, using grape and orange jello to match the candy.

Frosted them with Buttercream Frosting and decorated with Skittles and Starburst.

And of course, it wouldn’t be a birthday without candles and a “loud” Happy Birthday song!

Yep, 15 candles on one cupcake! We almost needed an extinguisher!

Here’s the birthday girl, with my son next to her. They are such cutey patooties!
