Mini Corn Dogs

  1. Whisk together dry ingredients
  2. Add buttermilk and egg, beat well
  3. Add a little flour if the batter is thin
  4. Heat oil in heavy pan to 300-350 degrees
  5. Cut hot dogs in half and add to skewer
  6. Pat dry with paper towel
  7. Dip in batter, let excess drip off
  8. Fry in hot oil, turning until batter becomes puffy, then spin skewer so the corn dog cooks evenly
  9. Cook for about 15 seconds or until golden brown
  10. Serve with ranch dressing and spicy brown mustard whipped together
