Well here I am again…tempting you with another yummy Apple Dessert! Yesterday we made Mini Caramel Apple Pizzas and today I’m serving up Apple Stuffed Cinnamon Cupcakes with Caramel Frosting…oh my!

All this week I’m sharing delicious Apple Recipes for you to enjoy during this wonderful Fall season! But, before we get to the recipe, I wanted to chat a minute about the Cupcake Tuesday linky. While I know you all love Cupcake Tuesday {and so do I}, I’ve seen a decrease in the amount of cupcakes being shared. So I have decided to open up the linky to ANY bake goods. You got it…cookies, cakes, pies, cake pops, cupcakes…it all works! So share your recipes with all of us! I will continue to call it Cupcake Tuesday, because everyone is familiar with that name, but now we want to see all the yummy desserts!

This cupcake, is similar to one I have shared before, but changed a bit and much better. The Apple Stuffed Cinnamon Cupcake starts with a doctored up cake mix, stuffed with apple pie filling and topped with a luscious frosting made with butter and caramel sauce. How can you go wrong? It’s heaven my friends!

Apple Stuffed Cinnamon Cupcakes with Caramel Frosting

Apple Stuffed Cinnamon Cupcakes with Caramel Frosting

Cook Time: 15 minutes

Ingredients

Cupcakes

  • 1 yellow cake mix
  • 1 small box instant vanilla pudding
  • 4 eggs
  • 1 cup water
  • 1/2 cup {1 stick} butter, softened
  • 1 tablespoon cinnamon
  • 2 teaspoons vanilla

Apple Filling

  • 3-4 cups finely chopped apples
  • 1/4 cup butter
  • 1/2 cup brown sugar, packed
  • 2 teaspoons cinnamon
  • 2-4 tablespoons water
  • 1-2 teaspoons cornstarch, if needed to thicken

Caramel Frosting {enough to frost 12-18 cupcakes}

  • 1/2 cup butter, softened
  • 2 cups powdered sugar
  • 2-4 tablespoons apple juice, depending on consistency
  • 2 tablespoons caramel topping plus a little extra for garnish

Instructions

Apple Pie Filling

  1. Peel and finely chop apples, place in medium saucepan on the stove.
  2. Add other ingredients except cornstarch and bring to boil, reduce heat and simmer until filling thickens. If needed, gradually add cornstarch and whisk after each addition. Note: water amount will depend on how juicy your apples are, gradually add water if needed.
  3. After mixture thickens, remove from heat and cool completely.

Cupcakes

  1. Preheat oven to 350 degrees and fill cupcake pan with liners. {this recipe made 18 cupcakes}
  2. In large bowl, combine all ingredients and mix well. Divide batter into cupcake liners, about 1/3 cup in each.
  3. Bake at 350 degrees for about 15 minutes or until a toothpick inserted comes out clean. Cool completely.

Caramel Frosting

  1. In large bowl, whip the butter until smooth and fluffy.
  2. Gradually add powdered sugar, alternating with apple juice until desired consistency.
  3. Stir in caramel sauce.

Decorate

  1. Using an apple corer, remove the center of the cupcake. Fill with apple pie filling.
  2. Add a heaping tablespoon of frosting to the top of the cupcake, using an offset spatula spread frosting and make a well in the center for extra caramel topping.
